Stack of golden pancakes topped with fresh berries and a drizzle of syrup, warm kitchen light

Our story

One pan,
the whole map.

A London kitchen stacking pancakes with the flavours of dishes from all over the world. One batter, a hundred passports.

How it began

A pancake that learned to travel.

We started with a simple question: what if a pancake could travel? So we let it. Each stack borrows from a dish we love somewhere in the world, then comes home to a hot pan and a plate in London.

The batter stays the same, honest and golden. What changes is everything on top: the spices, the sauces, the crunch, the sweet and the savoury. One plate can taste like Tokyo at breakfast and Marrakesh at dinner.

Mornings here are bright and unhurried. Evenings turn the lights down and the stacks up. Whatever hour you come, the kitchen is turning out pancakes that taste like somewhere else.

What we believe

A small idea, taken seriously.

Pancakes are the most forgiving food on earth. They take on almost any flavour and still taste like themselves. That generosity is the whole point of this place.

One batter, many homes

A single golden base carries flavours from Tokyo to Mexico City to Marrakesh without losing itself.

Seasonal, not fixed

Stacks rotate with the market. Come back in a different month and the menu will have moved on with you.

Sweet and savoury, equally

We refuse to choose. Half the menu leans dessert, half leans dinner, and both halves share the same pan.

The journey

Stacks that crossed borders.

Every signature pancake is a postcard from somewhere we ate, fell for, and tried to bring home. A few of the places on the menu right now.

The kitchen

A small team, a hot pan, a short menu.

We keep the kitchen deliberately small. A handful of cooks, one griddle that never stops, and a menu short enough that every plate leaves the pass exactly as we meant it to.

Every stack is built to order. Nothing sits under a lamp, nothing is rushed. If the kitchen is busy, the wait is the wait, and the pancake will be the better for it.

We are happy to talk through the menu, swap an ingredient, or build a stack you have been dreaming about. Ask us at the pass.
